My dad brought me some rhubarbs, so I made cupcakes. These were seriously a piece of heaven, so good! The muffin recipe is modified from Kinuskikissas recipe (in finnish).

RHUBARB CUPCAKES (10 small cupcakes)

100 g butter

0,75 dl sugar

1 egg

1,5 dl flour

1 tsp baking powder

1 dl yoghurt

150 g rhubarb

1,5 tbsp sugar

1 tsp vanilla sugar

  1. Preheat the oven to 200 C
  2. Mix the butter and sugar until foamy
  3. Add the egg
  4. Add the flour and baking powder (through a shifter)
  5. Add the yoghurt (I used turkish)
  6. Fill in the cups (1/3)
  7. Peel and chop the rhubarb, mix with the sugars
  8. Add on the cups
  9. Bake for 20 min
  10. Let cool down

2 dl double cream

2 tsp vanilla sugar

  1. Mix the cream and sugar, and whip
  2. Frost the cupcakes and decorate if you wish
