My mother in law and her husband were visiting us so I baked something fresh for them. I didn’t have much options since my baking essentials were quite limited. However these were really good, especially the frosting! Fast, efficient and yummy!

The muffin recipe is modified from chocolate cake recipe from Koristeelliset kakut (Cake decorating) issue 1.

CHOCOLATE RASPBERRY CUPCAKES (10 smallish cupcakes)

100 g butter

0,75 dl sugar

2 eggs

1,3 dl flour

2 tsp baking powder

0,5 dl cocoa powder (70%)

  1. Preheat the oven to 175 C
  2. Mix the butter and sugar until foamy
  3. Add the eggs one at a time
  4. Add the dry ingredients (through a shifter)
  5. Fill in the cups (1/3)
  6. Bake for 25 min and let cool down

2 dl double cream

4 tbsp cream stabilizer (raspberry flavored)

  1. Whip the cream
  2. Add the stabilizer and mix well
  3. Add the frosting and decorate as you wish
