My masters thesis instructor was visiting Finland (yes, I’m a friend with a professor, we became friends when she was teaching me at the university, nowadays she’s living abroad) and she gave me a call that she was in my town. So I quickly baked something to go with the coffee. The recipe is modified from Koristeelliset kakut (Cake decorating) issue 10.
MOCCA CUPCAKES (9 small cupcakes)
75 g butter
0,5 dl sugar
1 egg
1 tbsp coffee
1 dl flour
1 tbsp cocoa powder
1 tsp baking powder
- Preheat the oven to 180 C
- Mix the butter and sugar until foamy
- Add the egg
- Add the coffee (strong)
- Add the flour, cocoa and baking powder (through a shifter)
- Fill in the paper cups (1/3)
- Bake for 15 min and let cool down
75 g butter
100 g mascarpone
100 g chocolate powdered sugar
100 g powdered sugar
- Mix all the ingedients
- Add the frosting and decorate
