I wanted to do some fresh cupcakes with flowers to the candle party, so I decided to try lime muffins with vanilla frosting and some flower decorations. I actually had made the decorations earlier, but broke all of them one day! The box dropped from my hands! Argh!!! So I made new ones using the same royal icing I used for the cookies for the party, they were dry enough already in two hours! And prettier too 🙂

LIME CUPCAKES (18 smallish cupcakes)

125 g butter

0,75 dl sugar

2 eggs

2 limes

2,5 dl flour

2 tsp baking powder

  1. Preheat the oven to 190 C
  2. Mix the butter and sugar until foamy
  3. Add the eggs one at a time
  4. Squeeze the juice from the limes and add to the dough
  5. Add the flour (through a shifter) and baking powder
  6. Fill in the cups (1/2)
  7. Bake for 20 min
  8. Let cool down

60 g butter

100 g mascarpone

4 dl powder sugar

1 tsp vanilla sugar

green pasta color

  1. Mix all the ingredients, except the color
  2. Add the green color into the piping bag as one line starting as close as possible to the piping tip
  3. Add the frosting into the piping bag carefully (so you don’t smudge too much of the line)
  4. Frost the muffins and add decorations of your wish
