I had been yearning for a carrot cake for a very long time, and finally managed to make some! Actually a first carrot cake I’ve ever done and it was quite good! In addition to the carrots (two big ones) I put some almond powder and crush, and ginger bread seasoning in the cake. The recipe is basically same as the one found in the baking magazine (Koristeelliset kakut = Cake decorating) issue 2 so no sharing of the recipe.


I made one small(ish) cake and put icing in the middle of the cake too. For the really elaborate decoration I used those DIY sprinkles and ready made royal icing.
